Okay, if you want to do this properly you have to speak in Japanese, while 
someone translates. You make comments while picking at the food, or with 
hands on either side of the plate. You comment on the plate--ie, 
presentation--of the food, the way the sauce compliments, etc. If you have 
anything awful to say you try to say it as nicely as possible. For instance: 
"Using squid as a base for a dessert was an .... unusual and ....unique.... 
method to have chosen for this dish. I do not believe, however, that it would 
appeal to more than the very...accomplished.... of palates." Which is a nice 
way of saying, "Squid Ice Cream? Are you out of your mind?"

Remember, Japanese Honor and Saving Face is big.
