I learned a trick years ago from my favorite preserving book.  If you want
to make your own "frozen dinners," use sweet rice flour to thicken the
sauce.  It doesn't get gluey or break down the way roux or cornstarch does.
 I've been told sweet rice flour made commercial frozen dinners possible.
