Do we have any evidence that what we call "orange marmalade" is 
period? I think the original (and period) meaning of marmalade is 
quince paste, and the closest thing to a modern marmalade that we 
have yet found is a similar paste using citrus (in Hugh Platt--the 
final instruction is to box it up, which suggests something solider 
than what we call marmalade today).
