SC - fresh eggs?

Oh, so that is why when I go to peel Easter eggs, some of the white sticks
to the shell and it does not peel cleanly.  Thanks for explaining it.

I loved eating them every morning after going out and rummaging through the
henhouse. Talk about your serious grade AAA egg! My chickens got plenty of
calcium, good unmedicated feed mash and plenty of ranging about for plants
and
bugs. I really miss them. Never heard about having to hold eggs, unless it
was
to make hardboiled egs that would peel easier. A week old is just about
right,
enough air has seeped in through the shell to separate the membrane around
the
egg itself from the egg so when you boil and peel it the egg doesn't adhere
to
the shell and make a messy egg.
