A Duck Press is a funky little item with only 1 use [well, and pressing
fruit ;-) ]
After cooking your duck to a lovely rare or medium rare, you gently
remove the breast fillets and pop the rest of the carcas and meat into
the press where you squeeze the juices out of the rest of the duck to
use in making a sauce. Very wasteful, if you happen to like duck legs,
and wing drumettes [the other 2 parts dont have anything other than
'picking meat' and skin, though they are great for making stock with.]

Very wasteful as you essentially get 1 gluttonous breast portion and
sauce from a duck that would normally serve 4 or 6 servings. But it is
silverplated ;-)
