I'm sure it could be pectin. My surprise was at  one being added. It has been 
some time since I  reread my industrial food production books so i was caught 
offguard by the  mention of an unnecessary addition. I'm sure  that the 
thickening agent was added to give a better product  appearance  and 
consistency. Sorry for the brain f**t. :-)
