Question: the Le Menagier de Paris recipe calls for soaking the peels in
8 changes of water over 8 days (which I found made it easier to peel off
the white pith, also), and boiling once. I've seen the multiple boil
method used, but I seem to have missed the recipe, could someone send it
to me?
