Yes, what I'm buying is real saffron. You don't get that flavor with the
fake stuff - maybe some of the color, but not the intensity. Look for Pima
saffron. It's a little plastic box, maybe 3/4" square, in a blister pack on
a card. It's a product of Spain. I've also used the pre-powdered stuff of
the same brand, and it seems to be as good. I dunno - I just prefer the
whole spices for flavor.
I did buy a big bag of "saffron" long and long ago at an event for an
unheard-of price. I should have known that it was too good to be true; it
was safflower. It's the same color, but lighter in intensity, and the
threads are longer and fuzzier. The real test is the fragrance. Safflower
doesn't smell like much at all. Saffron is distinctive. (One of our
roommates says that when I cook with saffron, it smells like a feast.)
