SC - olives in period spanish recipes?

Some friends of mine told me about this recipe they had as an antipasto at 
an Italian restaurant on the way back fom Lochac Coronet. No specific idea 
on quantities or qualities, however I figure it is (ha ha!) conjecturally 
period.
