I've found that I have much better luck serving the beef first.  Once people
have their beef, they are happy that the feast will be satisfying, and when
the chicken comes, they see it as "more meat."  If the chicken is first,
then their reaction is "oh, great, another chicken feast."  If I give them
the beef first, I can get away with anything later in the meal.

Of course, those are my local carnivores... YMMV.
