Ysmay,

Boy are you behind (joke).

The sauce is easy.  First, I use ham slices because they are easier to
marinate than a whole ham.  Then the night before I cook the ham I put it in
a pan and pour Pepsi over it until it is about 2" deep in the pan (usually
an 11X13 pan), add 4 cinnamon sticks, about 10 cloves and a cup of honey.
Then I cover the pan with aluminum foil.  I let it marinate until it is
ready to go in a low (250 deg F) oven.  I let it bake for a couple of hours
in the sauce and then take it out of the oven.  It does not get dry because
of the marinade doesn't evaporate when covered (I have also done it in a
crock pot on low for 4-6 hours).  When I remove the slices from the pan,
right before serving, I remove the cinnamon sticks and cloves, then pour the
marinade into a bowl to be served with the meat.

I have also experimented and added candied ginger slices over the ham after
baking, oranges in the marinade and garlic in the marinade.  I loved the
garlic although my Mother found the mix of the sweet and spicy strange.
Everyone else loved it.

I'm waaaay behind in my emails and I'm not sure if anyone requested the
recipes, but I sure would like to have them - especially that cinnamon Pepsi
sauce thing!  Sounds yummy!

Lainie,

Sounds yummy!  I am doing special foods all weekend.  Last night was sausage
tortellini in a tomato parmesan sauce.  Tonight is Slow baked ham in a
cinnamon Pepsi sauce (really good if you ever try it), asparagus in
hollandaise and buttered new potatoes.  Tomorrow for breakfast is homemade
waffles and strawberry puree with maple cured bacon, clam chowder for lunch
with French bread and dinner will be chicken parmesan and orange cream
cheese stuffed crepes.  Then Monday I am making steak and shrimp scampi plus
a salad with blue cheese dressing.  Plus I will make at least one loaf of
bread a day of differing types.  Oh and Monday I am making a bouquet of
chocolate chip cookies on a stick decorated with hearts and icing.

If anyone want recipes let me know.  All modern and mundane but yummy!
