This is what I would have said a year or two ago. Now I'm not so sure. I'm
beginning to believe that the use of bread trenchers was an "air" of the
Nobility. To show they could do it. That they could afford to use food
this way and then basically throw it out.  I now think the peasants and 
lower classes used wooden plates and bowls more than is usually thought. 
Unfortunately, I can't remember the referances that made me think this 
way or cite precise evidence.
