Does anyone have a recipe (FAST!  I'm Making this TODAY!!!) for a cream
spread, comprable to mascarpone?  I bought two pints of heavy whipping
cream for the occasion, I'm making a filling for a bread swan (alsot obe
baked today).  I was just going to use a modern recipe, but if someone has
a more (kinda-sorta would work!) medieval recipe, that would be great!
