Beestings is the first few milkings after the birth of a calf.  They contain 
colustrum, a substance that carries a lot of nutrients and antibiotics not 
found in later milkings.  The "third milking" would be the third time the cow 
was milked after the calf was born.  It is still higher in milk solids than 
later milkings, but not as thick as the first two.
