GOod point...I can start with 1/2 pound of lamb per person (before cooking,
no bone) for my paste en pot (a lamb and onion stew, from le menagier) but
it ends up cooking down to nothing. Like less than 1/4 cup final volume per
person. Looks really stingy (of course its VERY rich, so they rarely can
eat more than that realistically, but it still LOOKS stingy).
my suggestion would be to make a single batch. Then take a cup measure out
and see what it looks like.
