Oh where do we start on the topic of the great British banger.  Old fashion
types maintain that only Pork can be used with various herbs and seasonings.
But basically the general "manufactured" rule is that if you can squeeze it
into a sausage skin it's fair game.  I have had some fairly exotic mixtures
but wild boar and venison (not together) are among my favourites.  When
making at home they are generally just pork with herbs.
