"If there is a common misconception that historic food is unpalatable,
how do you get someone into a well cooked feast to dispel that
misconception, and be willing to pay for it while they still think it's
going to be poorly done. You could do it personally and individually,
but that still leaves a lot of people with a misconception that
discourages them from paying money to eat what they think will be a bad
meal."

On another list, one completely unrelated to the SCA, I came across a poster who
was relating about going to a Valentine's Day event and going off site in the
garb. When queried why she didn't go to feast her answer was "because the
Valentine's Day event always has bad food. Everyone knows that." But she
couldn't think of a single friend or acquaintance who had actually gone to that
event's feast ever because "everyone knows" that it always has a bad feast.

People need to be convinced. They need to be taught that period food can be
good, and some of these people aren't going to find out because they aren't
going to feasts in the first place.
