No apologies necessary.  In the earlier discussions, I do not believe that 
this recipe came from a collection from southern Europe was mentioned.  
However, while I use whatever sage I have growing, Her question of which type 
was used is still valid. Perhaps the SCA herb list would be able to answer 
the question.
