Salut!
As for "brayed" galingale, you want to break up your galingale in a
mortar, but you don't want it real fine. The reason for this is that it
will be easier to leave behind when you go to rack it if the chunks don't
fit in the siphon. Don't worry about getting enough flavor out, it'll be
sitting there for a month and will hae PLENTY of time to leach out the
flavor.
