I just got this response from Paul.  I then asked him if sandalwood (the
edible variety, also known as sanders) would work, and he indicated that
it should.

Philippa already got to me. I think this should be t'u-sha and is maybe
sappan wood. I need the characters for a closer ID. It could be "indigenous
sha," which would be another kind of wood entirely but if it is an aromatic
there are only a few possibilities. The aromatic wood mostly commonly used
in cooking is sandalwood. Paul
