Check this file in the FOOD section of my Florilegium for some info on and
recipes for roasting beef:
roast-meats-msg (66K) 7/ 3/00 Hints and period recipes for beef roasts.
I'm not sure how many of these are from German recipes though.
For more on Germanic recipes check this file in the FOOD-BY-REGION
section:
fd-Germany-msg (84K) 5/10/00 Medieval and Period German food. Cookbooks.
> It is a dry site, what would be good to serve to drink?
You might check these files in the BEVERAGES section:
infusions-msg (8K) 1/20/00 Period infusions. Herbal "teas".
Barley tea.
jalabs-msg (48K) 12/ 2/99 Drinks with a sugar or honey-syrup
base such
as Sekanjabin (Persian Mint Drink).
beverages-NA-msg (80K) 9/ 2/99 Non-alcoholic beverages.
Unfortunately, there weren't a lot of non-alcoholic beverages in medieval
times especially in Germany.

I thought "compote" was another name for "compost", a variety of pickled
fruits and sometimes vegetables. I would check this file in the
FOOD section for compotes/composts:
pickled-food-msg (118K) 5/23/00 Medieval pickled food. recipes.
and perhaps these in the FOOD-FRUITS section:
fruits-msg (184K) 7/ 5/00 Medieval fruits and fruit dishes. Recipes.
fruit-pies-msg (29K) 4/12/00 Period fruit pies. Recipes. Baking pies.
I know there have been some cherry recipes given on this list.
