I don't have the nutrition tables here at work, but IIRC the root
contains something like 6-800 mg carbohydrate per g dry weigth. Figure
on perhaps 60-70% water in the fresh root. So yes, it is quite
nutritious, but also -- at least here in Sweden -- you need to leach
them overnight in cold water, or boil in several changes of water to
make it palatable. The leaves are nice to eat, and (as most leaves)
contain a bunch of vitamins and minerals, but virtually no
carbohydrates.
