SC - Sauces query

I don't have an exact recipe, but at the Trial by Fire competition we had
last weekend, I made up a cherry sauce (with the fruit)for venison. I
wanted to garnish it with mint but alas, none on hand. It was a spur of the
moment sauce, but all the ingredients were period (Trial by Fire is a period
cooking competion held outdoors on open fire with documentable recipes or
ingredients).
