This is exactly what I'm talking about. I was unsure of whether oats
were considered to contain gluten in and of themselves, or whether it
was simply a matter of most oatcake recipes containing at least a small
proportion of added wheat flour. I have a perfectly good oatcake recipe
(late 17th century) that contains nothing but oats and water (I forget
if it also has salt), but if it won't help, we need to keep looking.
