I just wanted to say thank you for all the posts in reply to my question,
they were -most- helpful.  
The evening's repast went off great, seems I fed 190 people in all - we had
enough food, but it was close :).  Note to myself - next time I offer to
cook for an event where the food is free to all comers, I gotta remember
that there'll be more comers than usual :)
