Surimi is a Japanese fish product, usually made from processed hake or
pollock, flavored and sometimes colored to resemble crabmeat or other
boneless seafood. In some cases it may contain a tiny percentage of real
crabmeat, but mostly it's kinda like Texturized Fish Protein. There's a
Chinese version, or rather surimi is a Japanese version of the Chinese
product, but the difference is that the Chinese fish cakes or balls are
never intended to be passed off as anything but what they are. They're
fish cakes or fish meatballs, usually deep-fried  and served in soup or
with noodles. The cakes are largish and usually sliced to be used
something like bean curd. Surimi, on the other hand, includes things
like "sea legs", that stuff often used to make fake crabmeat  salad, now
so prevalent that real crabmeat is becoming commercially insignificant
in some markets, as well as pseudo-shrimp, phony squid and bogus
lobster.  Not to mention faux scallops, which are normally sold breaded
and frozen, so the awful truth doesn't reveal itself until the first
bite. They have this really weird texture that is the result of the
stuff being formed into thin sheets, then rolled up like a jelly roll,
and then sliced into disks. I assume the idea is to produce something of
the fibrous texture of real scallops. Guess what? It don't woik.
