In my not so humble opinion, Wusthof rules!
Closely followed by some stainless Knives I bought at JC Penny 
- - "Belgique Classic"
I have had them 12 years of moderate household use, sharpened the Wusthof 
only once ( as opposed to cleaning up the edge by steeling ), and taken the 
Belgiques to the honing stone only 3 times.

I don't think that JCP still sells the knives, I have not seen knives of that quality 
there in some years.

Wusthof, Dick, or the better lines of Henkels (if the Henkels you are looking at is 
not more than you think you should pay, put it back, it is not the top of the line!
Henkels sells some mighty cheap-o knives, be careful, the brand alone is not 
sufficient to make an informed judgement.)

A friend of mine scored a 14 inch butchers knife at least 50 years old at a tag 
sale... It'll take a razor edge, and he can bend the knife almost double, and it
just springs back into perfect alignment!! (I have seen him do this, and it never 
ceases to amaze me.)

Personally, I like a hefty knife, with a full tang, bolster, and a smooth tapering 
curve.

But that is what I like, YMMV.
