I have a wonderful potato soup recipe from Colombia (Ajiaco) which I cannot make
properly in the states because I'm limited to at best about 6 varieties in the
grocery store, and my recipe calls for 9 to 15.   We could get anywhere from 15
to 20 varieties at the local grocery store.  (BTW, purple potatoes taste good,
but they turn purees strange colors.  ;> )
