SC - Meatless Chili

I've been known to make a pretty mean chili.  I've
even had relatives take it home to use to spice their
chili, too.
I came up with the following during one of those lean
periods when my daughters and I were going through one
of those lean times when we could afford meat once a
week:

1 large onion, chopped fine
2 tbs. vegetable oil
1 tsp. salt
1 clove garlic, crushed
1 TBS. chili powder
1 tsp. red pepper flakes
2 cups cooked red lentils
2 cups stewed tomatoes
1 small can tomato paste
2 Tbs. masa flour
2 Tbs. warm water

In a large cast iron skillet, cook onions in oil until
just beginning to brown.  Add salt, garlic, chili
powder, and pepper, stirring well.  Add beans,
tomatoes, and tomato paste.  Bring to a low boil,
reduce heat, and simmer until ready to serve, stirring
occasionally.  When ready to serve, mix masa flour
with water and stir into the chili, stirring until
thickened.
