When I did a Scottish feast, I did the following the try to recreate
Scottish Recipes:

1. Got a copy of the earliest known Scottish Cookbook (mid-18th C)
2. Did research on accounts of period food in Scotland.
3. Matched 1 and 2 with recipes in Elizabethan English recipe books.

(I also supplemented with some modern recipes for things like oat cakes
and bannocks)
