Wasn't someone looking for the meaning? This is probably too late, but
while thumbing through a new Scottish cookbook this evening, I found a
recipe for Cullen Skink and under it reads: "This is not an offensive small
animal but a traditional recipe for soup from the Moray Firth area. 'Skink'
comes from the Gaelic and means 'essence.'" Fish used is a smoked or finnan
haddie.
