While there is nothing wrong with "making' a menu comprised of dishes from a 
single manuscript (i.e. "period cookbook"), the manuscript itself is _not_ a 
period menu, any more than a modern cookbook could be considered a menu.  It 
is a collection of dishes and reciepts.
