SC - The truth about Green Beans Savory

Regarding amounts for Savory Tosted Cheese/GBS.... I am getting ready to do a 
feast in a few months and its for far fewer people than I have cooked in the 
past. Assuming about 60 people, how much brie would you buy?

I have the recipe memorized proportionally. I'm just having trouble deciding 
how much of the good stuff I need. ;)
