Hi Ilia, Well, if you use richer cream it smoothes out a lot. I notice that when I use half and half it's smoother. Also, if you freeze it then take it out later, leave it sit on a counter (in its container, of course) for 5-10 minutes, then stir it if you can or want to. Serian
