The dream kitchen.  Large enough for 8 to 10 people to work in.  Pantry for
heavy equipment -- movable workstations, floor mixer, bakery racks, chest
freezer, etc.  Standard pantry for dishes, linens, bulk goods and staples.
Walk-in cooler.  Small office for computer and cookbooks.  Tile floors with
floor drains.  Granite counter tops.  Halogen spotlighting with broad
overlap.  No over counter cabinetry (just a personal peeve).  Retractable
power drops for the movable workstations/counterspace/islands.

Large fireplace with spit rack, pot hooks, etc.  Built in oven.

An oven stack containing 2 gas ovens, 1 microwave and 1 convection oven.
Minimum of a 6 burner gas range.  2 dishwashers.  A large double stainless
steel sink with high power spray.  Large upright refrigerator/freezer.

Meat prep area with a large butcher block, slicer, grinder/sausage maker,
and small prep sink.  Under counter storage for meat prep dishes.
Refrigerated drawers. 

Vegetable prep area with small prep sink.

Area with adjustable counter for kneading, flour storage, pan storage for
small pans, and proofing bin.  Small microwave and counter top mixer.
Chilled marble slab for pastries. 

Small area with microwave, coffeemaker, teamaker, toaster, small broiler and
under counter refrigerator for preparing fast foods and quick meals.

As much empty counterspace as practical.
