You might look at the Sala Cattabia recipe. I did this years ago at a
Cook's List, using someone else's redacted recipe (and did not have an
original to look at). I hollowed out the loaf and moistened the innards
and the hollowed out crust, and used the crust as my mold, layering the
items inside it, replacing the top as a lid, then slicing it and serving
it cold on a plate with lettuce, IIRC. I have long felt that assembled
slightly differently it would make a good sandwich.

Hey, cool. Glad to see the Roman recipes are getting some use. I'm not at
home right now but to add to the list of Apicius translations, there is one
in English by Edwards and several in German(I don't speak German though).
IIRC the only English translations are Edwards, Vehling and Flower and
Rosenbaum. There might be some translations on various Roman web sites. I
can't think of their addresses at the moment.
If you have Ilaria Giacosa's book, be careful with using her recipes, she is
pretty liberal with exchanging garum for plain salt instead of looking to the
other possibilities. This type of stretch is unfortunately in alot of what
she does. OTOH, Sally Grainger has a book with Andrew Dalby, titled Classical
Cooking.
Sally is very into Roman recreation and is if I've understood her an
archaeologist who works out of London. In addition to her scholarly
background, she is a stickler for detail and has put a great deal of thought
into her recipes.She is a regular poster on the Apicius Cooking list.
I personally have several recipes from Apicius, but at the moment do not have
access to my library or my files. I'll post the list of my recipes next week
if your're interested and peruse the sources I have for some ideas.
If you are looking for a copy of Flower and Rosenbaum, there are several at
various on line book stores. I found one recently for $7 (I know, that was a
find) at King Book's in Detroit. I believe they have a web site if you want
to reach them.
