Hmm. When I made them, I worked with totally hard cooked eggs.  In fact, we 
bought them hard cooked.

Nope.  Hedgehogs are a pork meatball with ginger, made with slivered almond 
"spines" sticking out all over.  OK, in proper period fashion, it's a pig's 
stomach stuffed with the pork and ginger mixture, then has spines stuck 
through the stomach.  But I've never actually made one or had one served that 
way.  No eggs in hedgehogs, hardcooked or otherwise.
