Mis en place is hard when your far away from your site.  A New York chef attended our benefit in Arizona and he DEFINITELY needed a place to prep before the event.  You should try lobbying with your A&S officer some more.  The effort is worth it when you see the contrast in the finished products.  Are you the only entrant who needs two days to get there?  If not, get a coalition together.  There's strength in numbers :-)
