It may be being used in a form which means "store or save".  Without an OED
handy, it is a little hard to find all the nuances.

There is the connection to distilling of course, but a stilling is a storage
for casks, which may or may not be distillate related, and a stillroom is a
storage area in a pantry for wines, perserves, etc.
