 This is not entirely true. For instance shrimp can be successfully 
 substituted for scampi. More precisely some substitutions and adaptations do 
 not work. Lady Seaton's project is one which is seeking those that do. One 
 good thing is that many period recipes include examples of their own 
 substitutes.
