Certainly the tradition is often to replicate the Paschal matzoh of the
Last Supper. However, I have seen several different Christian
denomonations, including both Greek and Russian Orthodox as well as
various Protestant sects, using leavened bread in celebration of the
Eucharist. As in, I was there.

Yeah, I've never seen it in a Catholic Church, but I have seen leavened
bread being used at Catholic masses outside the church setting.

It does seem, though, that some Greek Orthodox authorities have
preferred leavened bread as a way to visibly distinguish their sect from
Judaism. For whatever reason...
