 About the dame difference between the wheats that are used to make different 
kinds of flour.  I know durham is a hard kind that makes flour good for pasta 
making, ant eh one used to make Southern flours is softer.  Makes a big 
difference in the finished product.  Same goes for various kinds of corn.
BTW, there are more colors than just yellow and white.  The following web 
site advertises purple, red, yellow, blue, white, and giant white. <A
