Gwen Cat has the 1581 recipe for "Hammelsgeil oder Bockshoden" and a
translation (ram testicles) on her site at:

The horse recipe only says that you can prepare the horse testicles in
the same way as described in the recipe for "Hammelsgeil ...".

Rumpolt has also a recipe for "Geil vom Hirsch" (stag's testicles) where
he mentions several ways of serving them. Rumpolt then goes on to say:

"Muß man es doch nicht alles in das Maul keuwen/ sonderlich einem faulen
Koch oder Köchin/ die gern lange schlaffen".
'There is no need to spell out all these kinds of preparation,
especially not to those lazy cooks who like to sleep long".
