SC - question after cordial recipe

Greetings

I just posted a peach cordial recipe that I had worked on w/ Murkial.

1 - If you are doing this for A&S, allspice and vanilla are new world
2 - vodka is out of period.  I use brandy which is only 80 proof, but is
period.  80 proof is sufficient to leech the alcohol soluble constituents
in most herbs, spcies and fruits.  Generally, the water and juice of the
fruits will bring out the water soluble components.
3 - I tend to use honey instead of sugar.  
The conversion is 1/2 honey:1 sugar.  If you prefer a sweeter drink try
2/3 honey:1 sugar.
4 - you will want to scrape the pith from the inner side of the peels or
they might give the drink an odd bitter tang.
