Gefilte fish, or gefülte fish, is a preparation of minced fish with
eggs, seasonings which may or may not include vegetables, and matzoh.
Think of fish meat loaf, but it is usually formed into balls and
poached. It is named for its former role as a stuffing; older recipes
call for the fish mixture to be packed back into the skin of the fish,
but nowadays it's most often shaped into an oblong ball and poached in a
rich fish stock. I have the recipe from Grossinger's Hotel in the
Catskills, someplace, but as I recall it is long and complicated
compared to many other recipes for pretty much the same product.
