I did an a&s display about 6 years ago at an event, and had been asked
if I could bring along something for the few token vegans who showed up
at that time, so I decided to make a pumpkin pye colonial style[no
crust, you parboil the hollowed pumpkin and flill it with custard and
finish baking it. Very yummy as a savory dish with herbs and bacon in
the custard...] and the regulalr version got great marks, but I also
made a version using tofu and tvp bacon where I actually used the cooked
pumpkin as the mold for the tofu[i mixed the herbs and bits in the soy
milk and catalyst and let it drain out tiny holes in the bottom of the
pumpkin so when it finished it had the same consistancy as the custard.
Tasted very respectably like the regular savory custard too] but the
judges thought it was a waste of time-since nobody important was vegan!
Despite the a&s person at the timeasked specifically that if we made
food to make a vegan friendly version too! Of course all of the vegans I
knew that had it as a main dish for dinner thought it was neat. I still
will make sure that if I am working the kitchen at that event I bring
along the makings for something vegan like imam bayadi, or somethig of
the like.

I'm sorry to hear that you artists have had such bad experiences with
these
contests.  I hope you find a venue where your hard work and creativity
will
be appreciated and rewarded (but then all the OOOOOhhhhhsss and
AAAAAAhhhhhss you get at presentation to your guests can be a huge shot
in
the arm :-)
