I'm sorry, I was being less than clear.  The stuffed calabaza recipes, 
which might be for something pumpkin-like, are in Granado (1599).  
They, and the other calabaza recipes in that same cookbook, do not 
say anything about "scraping until white".  The reference to whiteness 
was in the calabaza recipes in de Nola (1529).  However, I am very 
interested to learn that pumpkins are not always the orange color I 
associate with jack-o-lanterns and pies.  Thank you for the info.

I can translate the recipe this weekend, and will post it to the list.
