In my opinion, brisket has too much fat to make a good stew. I prefer to bake or roast brisket in a moist oven and let the fat drain off into a catch pan. I tend to use cubed chuck roast for stews. Bear > It sounds like brisket may make a good meat for stewing? > > Angeline
