Greetings Kiri and all,
Yes, I will share the recipe.
6 eggs
2 medium oranges
1 lemon
1t sugar
salt to taste
beat eggs, squeeze fruit and add juice.  add juice and sugar
to eggs.  heat a bit of olive oil in a pan, add egg
mixture.  Cook until done (just remember you're going to get
a different consistency from what you'd normally have with
an omelette)
