Dried corn keeps almost indefinitely, but it's kinda hard to eat.  Soaking it 
in lye not only softens it, but also bleaches it.  There is a company out 
there, called Manning Hominy company that claims their process uses no lye,  
Don't kow how they do it, or how they can call it hominy without the lye.
